Why is it that breakfast is the hardest meal of the day? Yet it’s the most important! So sadly a pop tart just will not do. I’ve been looking around for a good smoothie recipe and I have been seeing them with spinach. “Ummm… GROSS” was the first thing that came to mind thinking of blended spinach but I took the dive and went ahead and tried it. The smoothie was amazing and it’s an easy breakfast I can take in the car with me or feed and play with Max while sipping on it. And trust me, you cannot taste the spinach at all! “Sure…” that’s what I thought also and I’m telling ya as long as your kids did not see you mix it they will never know! I made enough for about two servings and it could also work as a fast lunch. An easy and healthy meal is a plus in my book and I am always willing it give it a try.
Here is what I put in my smoothie.
– A handful of baby spinach (about 2 cups)
– ½ cup fresh blueberries
– ½ cup fresh raspberries
– 1 cup frozen strawberries
– 1 banana
– 1 ½ cups water
No need to add any sugar or sweetener either its so yummy and sweet with just the fruits.
