Chocolate Chip Pancakes Mini Muffins
Pancakes are a family favorite here! My kids love them and they make the perfect weekend breakfast recipe. Since pancakes usually take a lot of time and standing near the stove to make we usually save them for Saturday mornings. With these Chocolate Chip Pancakes Mini Muffins you can eat pancakes all the time. Just spoon your mix into a mini muffin pan and pop in the oven while your getting ready and 10 minutes later pancakes are ready to eat!
I of course topped mine with whipped cream! I mean chocolate chip pancakes have to have whipped cream, I’m pretty sure that’s a rule and I’m not here to questions it.
- Flour, 1 cup
- Baking powder, 1 tsp
- Baking soda, 1/2 tsp
- Sugar, 1 tbsp
- Egg, 1
- Milk, 1 cup
- Butter, melted,1 tbsp
- Chocolate chips, 1/2 cup
- Preheat oven to 400 degrees F.
- Shift together flour, baking powder, baking soda, and sugar. In a separate bowl beat egg then add milk and melted butter. Now mix together wet and dry ingredients. Fold in chocolate chips.
- Pour pancake mix into mini muffin pan and bake for 10-12 minutes. Remove from oven and allow to cool for 1-2 minutes.
- Optional: Serve with maple syrup and whipped cream.
