Easy Corn Salsa
When I moved a few years ago I left Chipotle in my hometown. It was almost 8 years before one opened in my small town and I might have jumped for joy and ate there every single day for a week. Chipotle was one of my favorite places when I was in high school. My best friend and I loved spicy and Mexican food so we loved getting lunch there. I remember her telling me about it after she ate it for the first time and taking me after to try it and it was love at first bite.
While I’m not going to claim this as an exact dupe of Chipotles for me it’s pretty close and definitely satisfies those cravings! I topped mine on my cilantro lime chicken tacos and it’s on the side of about any taco night we have at home now!
